I often order shrimp and grits when we get seafood, and the one at Salt Traders in Round Rock, TX inspired me to figure out how to make it well. Here is my Salt Traders shrimp and grits recipe attempt.
Total time: 30 minutes
Servings: 4
Ingredients
- 1 pound shrimp (16/20 per pound is the size I used)
- 2 large bacon strips
- 1 cup grits
- 1 cup whipping cream
- 2 tablespoons butter
- 1 cup blue cheese
- 1 green onion
- 1/4 cup white onion
- marinara sauce
- cajun seasoning
- honey
- hot sauce
- garlic powder
Directions
- Dice the green onions and slice the bacon into small pieces
- Bring a mixture of 3 cups of water and 1 cup of whipping cream to boil.
- Add the grits, lower the heat, and let them cook.
- When finished, stir in the butter and blue cheese and reduce to simmer.
- While that simmers, cook the bacon and the shrimp in a skillet.
- Push bacon and shrimp to the side when cooked, and cook the onions in the bacon grease.
- Season the shrimp/bacon/onion mix with the cajun seasoning, honey, hot sauce, and garlic powder.
- To serve, scoop the grits into a bowl, put a couple of spoons of marinara sauce on top, and put the shrimp/bacon/onion mix on top of that.
Result
This was awesome. It tasted very similar to the Salt Traders' one from what I roughly remember. This is very heavy though. The rough nutritional info per serving (it makes 4) is below:
